Step-by-step
1. Rinse the berries
Gently rinse the berries under cool water. Hull the strawberries, which means cutting off the green tops, and halve any large berries so they blend easily.
2. Start the blender
Add the berries, 2 cups of the cold water, sugar, lime juice, and salt to a blender. Starting with only part of the water helps the fruit blend more smoothly.
3. Blend until smooth
Blend on high speed for 30 to 60 seconds, or until the berries are fully broken down. The drink should look smooth and bright, with tiny berry seeds visible.
4. Thin the drink
Add the remaining 2 cups cold water and blend briefly, just until combined. Taste the agua fresca. If your berries are very tart, blend in 1 to 2 more teaspoons sugar.
5. Strain if desired
For a smoother drink, pour the mixture through a fine-mesh sieve into a pitcher and press gently with a spoon. Skip this step if you like a fuller texture and want to keep more fiber.
6. Chill or serve
Serve right away over plenty of ice, or refrigerate the pitcher for 30 minutes to make it colder. Stir before pouring because fruit pulp naturally settles.
7. Garnish the glasses
Pour the agua fresca into glasses and add mint sprigs or lime wheels if you like. Serve cold.
