Use ripe berries for the most natural sweetness. Strawberries give body, blueberries bring deep color, and raspberries add a little tartness. A squeeze of lime keeps the drink lively.

This recipe is written as an unstrained agua fresca, so you keep more fruit flavor and fiber. If you prefer a smoother drink, you can strain it through a fine-mesh sieve before serving.

  1. 1. Rinse the berries

    Gently rinse the berries under cool water. Hull the strawberries, which means cutting off the green tops, and halve any large berries so they blend easily.

    Add the berries, 2 cups of the cold water, sugar, lime juice, and salt to a blender. Starting with only part of the water helps the fruit blend more smoothly.

  3. 3. Blend until smooth

    Blend on high speed for 30 to 60 seconds, or until the berries are fully broken down. The drink should look smooth and bright, with tiny berry seeds visible.

    Add the remaining 2 cups cold water and blend briefly, just until combined. Taste the agua fresca. If your berries are very tart, blend in 1 to 2 more teaspoons sugar.

  • Make-ahead: Blend the agua fresca up to 1 day ahead. Keep it covered in the refrigerator and stir well before serving.
  • Storage: Refrigerate leftovers in a covered jar or pitcher for up to 2 days. The flavor is freshest on the first day, and some separation is normal.
  • Frozen berry swap: Use 450 g frozen mixed berries if fresh berries are not in season. Thaw them first for easier blending, or blend a little longer if using them still icy.
  • Sweetener swaps: Replace the granulated sugar with honey, agave, or maple syrup. Start with 3 tablespoons, then add more to taste. Honey is not vegan, if that matters for your table.
  • For a tarter drink: Add another tablespoon of lime juice. For a milder drink, add 1/2 to 1 cup more cold water.
  • If the drink tastes flat: Add a tiny pinch more salt or a little more lime juice. Salt does not make it salty; it helps the fruit taste brighter.

Do I have to strain agua fresca?
