1. Chill the drinks
Place the prosecco, club soda, and canned lychees in the refrigerator until cold. A spritz tastes cleaner and stays fizzier when every liquid starts chilled.
2. Make the lychee base
Add the drained lychees, lychee syrup, and lime juice to a blender. Blend until smooth, about 20 to 30 seconds.
3. Strain the mixture
Pour the blended lychee base through a fine-mesh strainer into a measuring cup or small pitcher. Press gently with a spoon to get the liquid through. Straining removes pulp, which gives the spritz a smoother texture.
4. Fill the glasses
Add ice to 4 wine glasses or large tumblers. Divide the strained lychee-lime base evenly among the glasses, using about 1/4 cup per drink.
5. Add the prosecco
Slowly pour about 3/4 cup prosecco into each glass. Pour down the side of the glass to help keep the bubbles from foaming over.
6. Top with soda
Add about 1/4 cup club soda to each glass. The soda lightens the drink and gives it a clean finish.
7. Stir and serve
